I tend to think that you may have more probability of getting an useful
answer if you turn this the other way round.

Can you provide a list of Intel board you'd be interested in using
(specifying, for each of them, main characteristics, and links to as
complete as possible specs)?

Then someone may be able/willing to have a look and tell you which ones
are suitable and/or recommended.

Just my 2 cents.
