I applied to master, with the following changes:

I updated the release announce link in hash file comment.
I added the removed options in Config.in.legacy.
I added back the package patch: it has been backported in the "16.0" 
branch:
https://gitlab.freedesktop.org/wayland/weston/-/commit/fdde71ef53fa0cc761364ca075a8f68f93033b26
but is not in the "16.0.0" tag:
https://gitlab.freedesktop.org/wayland/weston/-/blob/16.0.0/meson.build#L182
Finally, I reworded the commit log, explaining that the "pipewire" and
"remoting" plugins were only deprecated in this 16.0.0 version, but 
removed
soon after in the main development branch.
