You might take a look at http://www.linitx.com/ . They have a number of cases.

It should be, yes.

If you set something (mdadm, for instance) up to monitor your raid, yes.

If you have the cash to burn, HW raid is a bit easier (IMHO) to use. I have 
nothing but praise for 3ware's controllers (well, except for RAID-5 write 
performance).

You can boot from RAID1, so you could create a small RAID1 set, to boot off.
