I wrote some scripts to graph CPU usage of all domains, from Domain-0. 
If anyone wants them, they are (with a little example and some minimal 
documentation) here : http://skaya.enix.org/wiki/XenStats/

I'm trying to produce the same graphs for disk activity, but I haven't 
figured out yet how to get this information easily (tools like iostat 
can't check dm block devices, for instance...)
