I've had great success getting Xen running on multiple Gentoo 
installations using the 2.0.1 source tarball.  First, make sure to 
satisfy all the dependences (twisted 1.3.0 is masked, but required).

Then just follow the build and install instructions provided by Xen.  
The only thing you have to do differently is before installing, do a 
make menuconfig in each of the kernel source directories and enable 
devfs.  You can also just modify the .config's by hand.  Do a make and 
the follow the installation instructions.
