Perhaps I'm oversimplifying this, but isn't this what you want?
iptables -t nat -A POSTROUTING -s $MAILSERVER -o eth0 -j SNAT --to $IP1
iptables -t nat -A POSTROUTING -s $LAN -o eth0 -j SNAT --to $IP2
