Tempted: YES !

Time available: (currently) NONE

Being on the wish/todo list: since years :)

(and I might have to add some board specifig #ifdefs because of the
16 MB mapping)

BTW.. are you sure the CFI driver cannot handle such a simple flash?
It might need just the proper #defines.
After all, the Spansion 8/16-bit wide flashs are not uncommon,
neither should it be uncommon to connect them in 8-bit mode.
