For the record here's part of the script I came up with:
TAG=v1.1-rc0
NAME=qemu-1.1-rc0
git clone git://git.qemu.org/qemu.git $NAME || exit 1
cd $NAME || exit 1
git checkout $TAG || exit 1
git submodule update --init || exit 1
rm -rf .git roms/*/.git || exit 1
cd .. || exit 1
tar -c $NAME | bzip2 > $NAME.tar.bz2
/-F
--
