testdisk is quite good at recovering partitioning and partially overwritten
filesystems. You can find testdisk at https://www.cgsecurity.org/wiki/TestDisk
Many recovery packages include testdisk. My own favorite is SystemRescueCd,
available from http://www.system-rescue-cd.org/
