I'm not sure about OpenWRT's scripts but you can specify the channel width
when setting the frequency (before joining the mesh).

E.g.:

ip link set wlan0 up
iw dev wlan0 set freq 5745 80 5775
iw dev wlan0 mesh join my-vht-mesh
