Could I not just apply this method to all traffic?

Sounds better, actually.

Can you point in the direction of some practical examples?
Perhaps some specific documentation?

This assumption is correct. The box has a separate, physical interface 
for each DSL and I do simple SNAT for each outgoing (DSL) interface as 
it is now.
