This is kind of odd, and I've never noticed it before?
When I'm replying a post sent linux-admin, my reader (IMAIL) is putting
the posters email address in and not the list?

That's normal. A "reply" is normally addressed to the sender, i.e. the
address in the Reply-To or From headers. Some mail clients also have a
"follow-up" option, which replies to the sender and to all recipients,
i.e. to addresses in the To or CC headers.
Some mailing lists explicitly add a Reply-To header to direct replies
to the list. But this is generally considered bad practice. The
Reply-To header "belongs" to the sender; if their mail system sets the
From address automatically, the Reply-To header may be the only way in
which they can specify the correct address to use for personal
replies.
