is there a simple way to tell sendmail to use a port other than 25 for
sending?

It doesn't use port 25 for sending; it uses an ephemeral port (unless
you specify the 'R' flag, in which case it allocates a privileged
port). I don't think that you can force the use of a fixed port (other
than by modifying the source code).

Actually I expressed myself poorly. I needed to know if I could make sendmail
connect to a port other than 25 on the destination host. As it turns out,
both the originating ephemeral port and the destination port can be modified:
the first by using the ClientPortOptions (ClientPortOptions=Port=port_#) and
the second by modifying the mailer definitions (the ARGV parameter as in
A=TCP $h port_#.
