Hi,
If from the server console, I `startx`, is it possible to then ssh into
that server and get a GUI? I suspect you can. Can anyone point me in the
right direction?

If you ssh in with X forwarding enabled and you are running a local X
server then you will be able to run graphical applications on the remote
machine and they will be rendered on the local machine. However, if you
want a full xdm/gdm login from remote machines you will need to look
into enabling XDMCP.
You could also use VNC (through the Xvnc server) but I can't say that I
recommend it (although it may be more closely integrated these days, but
when I first tried it years ago it was a bit of a mess).
