Would it be worth using snd_pcm_hw_constraint_list here? We are
going to error out of hw_params if the user requests anything
other than 2 or 8 channels so we should probably just constrain
to those two.

snd_pcm_hw_constraint_single, it's exactly the same thing but I
guess we should probably use the helper if it exists.
