Hi,
Is a SPI device as bitbanged over GPIO enough of a "real" SPI device
that the spidev can be used for it? I'm having trouble getting the
interfaces to line up.

Yes -- modulo bugs. The bitbanging would be via the SPI master controller, and that's written to be fairly close to a reference implementation. and spidev is just one possible client.
