how about using 3 rules?
iptables -t nat -A POSTROUTING -d server1.ip.address -j return
iptables -t nat -A POSTROUTING -d server2.ip.address -j return
iptables -t nat -A POSTROUTING -s x.x.x.x -j MASQUERADE
