The concept is right, but \+ is a GNU sed-ism, which is not portable to
all versions of sed.  Better would be:

-e 's#^QEMU [0-9][0-9]*\.[0-9][0-9]*\.[0-9][0-9]* mon#QEMU X.Y.Z mon#'
