Took a look in my U-Boot 1.0.0 directories and noticed that there are 4
boards which appear to be PXA-based.
My question is:- Is this a complete port of U-Boot or is it a "work in
progress"?
I'm just trying to get an early feel for the work involved in using a
PXA255-based board.

Should be nearly complete. I think some folks are still changing memory
layout stuff for ARM. But, overall it should work fine.

It works for the boards in the tree, although there is quite a lot of
stuff which could be improved. There is a lot of code duplication
between the boards which could be put into the CPU part instead of the
board dir and some subsystems surely need more work. But in general,
yes, it is ready for prime time.
