Does anyone know of docs describing the PC disk partition tables, MBR
format, etc?

Mark,

The lilo and fdisk code, as painful as it is, pretty well documents the 
PC partition table interface and has source code for an MBR to boot 
typical partitions from a partition table.

I have heard "The  Undocumented PC" might contain this information as 
well, but I don't have that specific book.  Might check at a library.

I believe that www.linuxdoc.org has a number of HOWTOs that have information
on this.  I think there is a HOWTO on the boot process, a HOWTO on partitioning,
and a couple others that would apply.  I remember getting a lot of detailed
information about boot sectors etc. from one of those HOWTOs.

You also might want to check out the documentation of lilo and grub. Both 
have useful information on each of these subjects.
