We've always recommended Oskar Andreasson's tutorial at
http://iptables-tutorial.frozentux.net/iptables-tutorial.html

There are also some (slightly dated) training slide shows in the
training section of the ISCS open source network security management
project (http://iscs.sourceforge.net).
