Well, it's running about three days with two virtual machines
without any problem.

I notice that xen0 doesn't have SMP support enabled. 
Does it make sense enable SMP on xenU?

It is not possible to enable SMP in the Linux config as we do not
support SMP guest OSes.

Xen itself is SMP capable, and will run multiple single-processor
guest OSes each on a different processor simultaneously.
