I've lately realised there is no encryption or auth setting in the current bluez
release..
Is there any way, to set the devices (especially newly plugged) to use secure
communication?

the auth and encrypt settings were only activated security mode 3 and
that is not what you actually wanted since it made a lot of device
unusable and complicated things. The daemons can request authentication
and encryption. And of course the remote device can also force
authentication and encryption.
