On gstreamer-0.10, imx-gpu-viv supplies imxv4l2src and imxv4l2sink
What are the equivalents on gstreamer-1.0?

I found the correct packages: gst1.0-fsl-plugin gstreamer1.0-plugins-imx
Sadly, the imxv4l2src element does not support "capture-mode"
for selecting different modes (resolutions) from my camera.
Where/how can I report this deficiency (I couldn't see any
contact URL, etc, in the recipe)?

The first comes from Freescale, so a SR report should work. The later
comes from the community and the driver of this effort is Carlos
(Cced).
