Anyone know, or where I might find, how many packets per second can be
sustained with the new 2.6 kernel and various processors?

I can tell you a pretty close number. It all depends on what type of
packets, size of routing table, filter rules, shaping rules, etc.  
If you want shoot me an email and tell me what you are doing.
