No, not in v2 — drain_rx_fifo reads the FIFO count once up front and
iterates with a for loop, so bytes arriving after that initial read could
be missed. Will fix this in v3 by re-reading the count on each iteration
and looping until the FIFO is observed empty.

Concurrent calls to reg_target/unreg_target are already serialised by the
I2C core — both i2c_slave_register() and i2c_slave_unregister() hold
I2C_LOCK_ROOT_ADAPTER around the adapter callbacks. 

No additional lock is needed; will update the struct comment to mention
the adapter lock.
