I have a swap partiton on each of three disks. Is it a good idea to
create a logical volume utilizing these three partitions, and make
one swap volume, say even striping it across all three disks?
Thoughts/suggestions?

/dev/hde9 swap swap defaults,pri=1 0 0
/dev/hdh9 swap swap defaults,pri=1 0 0
/dev/hdg11 swap swap defaults,pri=1 0 0
that do the same, but without the overhead of useing lvm or raid

No.
The linux kernel is already pretty smart about this.
