I can reproduce this every time. 
Using amdgpu-pro seems to fix the problem.

I asked Psyonix for the debug symbols bug had no response.

I opened a bug report on Rocket League for the menu freeze.

Shaders/materials seems to load very slowly compared to the Windows version.
